Adobo Cantina station at Café Evansdale officially opens

Adobo Cantina, Café Evansdale’s new Mexican food station, officially held its grand opening Monday, Jan. 16 with a ribbon-cutting.

Last week, Adobo Cantina started generating excitement during a soft open, including a special Taco Tuesday with award-winning chef, author, and TV personality Aarón Sánchez on Jan. 10. Adobo Cantina is the result of a partnership between WVU Dining and Sánchez, who is lending his expertise and recipes to Adobo Cantina. During his visit, he met and took photos with students as they tried out the new cuisine.

The station will serve lunch and dinner Monday through Friday, and is located in the center grill area of the dining hall. Under the guidance of Chef Sánchez, Adobo Cantina Executive Chef Monica Gaarz and their talented on-site team, the menu will bridge traditional Mexican food with a modern approach and utilize the very best ingredients.

Offerings at this station will be available to all diners that swipe in at Café Evansdale at no extra cost. Including this new station at a dining hall rather than providing it at a retail restaurant enables students with dining plans to have more variety in the food they are getting at the dining hall, without needed to use Dining Dollars.
