On Wednesday (Dec. 7), WVU Dining Services is holding a special sneak peek of Adobo Cantina, the new Mexican food dining station coming to Café Evansdale in the spring semester.
The new station comes from a partnership between WVU Dining Services and award-winning chef, author and TV personality Aarón Sánchez, who is lending his expertise and recipes to Adobo Cantina.
From 11 a.m. to 1 p.m. on Wednesday, diners at Café Evansdale will be able to try some of the dishes that will be offered next semester at Adobo Cantina, cooked by the station’s exclusive Executive Chef Monica Gaarz.
Chef Gaarz is joining WVU Dining after nearly a decade of working as a chef at Texas Christian University, and she will be meeting students during the event.

The dishes that will be served on Wednesday include Fried Plantain & Tortilla Chips with Salsa Roja and Guacamole, Chile Colorado Enchiladas, and Roasted Brussels with Charred Jalapeno Vinaigrette. There also will be raffles during the event.
Adobo Cantina will be located in the center grill area of the dining hall. Under the guidance of Chef Sánchez and the leadership of Chef Gaarz on-site, the menu will bridge traditional Mexican food with a modern approach and utilize the very best ingredients.
Offerings at the station will be available at no extra cost to all diners that use their meal swipes at Café Evansdale. Including the station at a dining hall rather than a retail location provides a greater variety in food options to students with dining plans without using Dining Dollars.
