Chef Aarón Sánchez partnering with WVU Dining Services on new Mexican food station at Café Evansdale

WVU Dining Services has announced a new partnership with award-winning chef, author and TV personality Aarón Sánchez.

He will lend his expertise and recipes to Adobo Cantina, a new Mexican food dining station at Café Evansdale that will open in the spring semester.

Chef Sánchez has starred in multiple Food Network shows, most notably “Chopped” and “Chopped Junior,” and he currently is a judge on FOX's hit culinary competition series “MasterChef” and “MasterChef Junior.” Chef Sánchez also is the chef and owner of Johnny Sánchez restaurant in New Orleans, Louisiana.

“We are very excited to have Chef Sánchez bring his traditional authentic cuisine to WVU for our campus community to enjoy,” said WVU Dining Services General Manager Evan Jacobsen. “Not only is this a great opportunity for us to work with an incredible chef, it also brings a one-of-a-kind experience to Café Evansdale.”

Adobo Cantina will be located in the center grill area of the dining hall. Under the guidance of Chef Sánchez and his talented on-site team, the menu will bridge traditional Mexican food with a modern approach and utilize the very best ingredients.

Offerings at the station will be available at no extra cost to all diners that use their meal swipes at Café Evansdale. Including the station at a dining hall rather than a retail location provides a greater variety in food options to students with dining plans without using Dining Dollars.

“Chef Sánchez has been a great partner for this initiative because he knows authentic Mexican food and he’s passionate about cooking,” said WVU Dining Services District Manager Michael Dahl. “As we continue to strive to be the best campus dining program, initiatives like Adobo Cantina will help create a dynamic and exciting dining experience. We know many students love Mexican cuisine, so we’re providing that in a big way.”

Once Adobo Cantina opens, food will be served for lunch and dinner Monday through Friday and will feature a revolving menu of great Mexican fare.
